Bajo las instrucciones del Chef Alfredo, y su equipo siempre dispuesto, atento y preocupado por nosotros, tomamos clase de MOLES. Hacer Mole es un arte y una ciencia, merece la pena conocer las técnicas un poco de historia, etc y además de aprender los ingredientes y los procesos de elaboración del mole y las famosas Margaritas, al final degustamos nuestros moles y tortillas hechas a mano, sin lugar a dudas de los mejores moles de mi vida. El curso fue dado en español e inglés, el chef nos supo llevar y confirmar un buen grupo con quien convivir y pasar un tiempo interesante. Our family had a wonderful time learning techniques and recipes for making tacos (with homemade tortillas), salsas, and margaritas. Alfredo was super-well organized and entertaining as we cooked and then sat down for lunch. This experience was our favorite during out trip to Huatulco, as we learned about Oaxacan cooking and cuisine. Would highly recommend taking a cooking class - this is from a family that has minimal cooking skills.

A must on your to do list while in Hautulco! Friendly, Fun, Enjoyable and Delicious experience. Alfredo and his team are wonderful hosts. Transportation was excellent.

I can't recommend Wahaca cooking enough. Not only is this experience hands on, entertaining and extremely delicious, it is also very educational. I was fortunate enough to take part in the Taco and Margarita class in January and would highly recommend this or likely any class that Alfredo teaches. We will definitely be back!!

This cooking class was so much fun! We learned a lot, Alfredo was so friendly, and the food we made was absolutely delicious! He even shared the recipes with us after the class via email. It was awesome to share the kitchen with Alfredo! Highly recommend this experience. We will definitely be back!

This cooking class was the highlight of our trip to Huatulco. Alfredo was amazing, his simple and clear instructions made the cooking class special. However, prior to the cooking class Alfredo took us on a shopping trip for the ingredients at a local town, shopping at local street vendor while providing history and education about the town and the products.
We would highly recommend this excursion to anyone visiting the area.

We were picked up by a van at our front gate. Then went to Bocana beach. Alfredo was waiting and extremely organized. We learned all about various specific ways to create traditional Mexican food. Including tortillas, several salsas and marinades. We prepared shrimp, fish, chicken and beef. Some for tacos others for empanadas. Still others battered and served on the side. Margaritas were enjoyed throughout this process. At the end of the class we enjoyed the food. Every one went home with a desire to only eat freshly made tortillas. The classroom was a joy to be in and everyone was able to participate.

This class was such a fun thing to do. Pick up was early (to me that’s right on time)! Alfredo was there to greet us. Super friendly and very comfortable atmosphere. I went with a group of 4 friends. We had so much fun and Alfredo makes you feel welcome. You get to actually participate in the class, chopping, stirring, mixing, etc. he explains all of the ingredients and how they are used or help to aid the delicious dish we are creating. I learned a lot. Laughed a lot and left very full from the delicious meal we made. Recipes were shared via email after the class which is such a bonus! Afterwards my friends and I wanted to walk on the beach for a short while and Alfredo kindly arranged for a later pick up for us at the beach. So thoughtful. I would highly recommend this class. Do it! Have fun. Thank you to Alfredo and his staff (which were also super helpful and kind).

A well organized and fun experience. A driver picked us up at our hotel and drove us to Alfredo’s home. We were soon joined by others who were eager to learn about Mexican cooking. Alfredo is a wonderful teacher and it’s a very friendly atmosphere in a spacious kitchen. We all got to participate in the cooking and to enjoy the tasty foods afterwards. Highly recommended!

An incredible experience! My husband and I learned so much and will definitely be taking another class next time we are in Huatulco. The food, beverages and company were all fantastic and Alfredo is an excellent and informative instructor.

It’s hard to pick a favorite moment from any vacation of all time. Maybe I’m a little biased since we just returned from this trip, but watching my kids knead tortilla bread, devein shrimp, mix margaritas, squeeze limes, chop cilantro, blend salsas, taste test everything – it filled my heart seeing them so happy. Watching them take instruction and be able to reap the rewards at the end of the day by eating 40 million tacos was also a beautiful thing.
Wahaca Cooking class was a last-minute add by my husband, tossing it into our agenda less than a week before heading out on vacation. He chatted with Alfredo, the head chef, on Instagram and found out they could accommodate kids as young as 8 (which ours is) so my husband signed us up based on positive reviews and his personal enjoyment of taco and margarita consumption.
Wahaca is located in La Bocana Copalita, a 20 minute drive from Santa Cruz. A cab picked us up at 9am to head there and we cooked and ate until 1pm. There’s a huge table on the covered patio that held 10 of us, there were clean bathrooms, an authentic tortilla oven, pictures of the chef’s mother, a large colorful logo, and fresh ingredients waiting for us to turn them into something wonderful in the indoor kitchen. So we apron’ed up, washed our hands, and got ready for some action.
Alfredo was PHENOMENAL. I have no other words for him. He did not baby our children, but kept them involved and interested. He trusted them to do hard things and helped them do them properly. He laughed a lot and kept the beer and fresh juices flowing. As a group of 9, we made four different salsas, four protein options (fish, chicken, pork, and shrimp), two flavors of margaritas, pico de gallo, sliced vegetables, and more than 50 homemade tortillas. You could sense his authentic joy when it comes to the kitchen. And by the end, our kids felt the same.
Once we finished the chopping, cutting, kneading, flipping, cooking, breading, and mixing, we ate the fruits of our labor. We ate. And we ATE. And we ate some more. You’ll never know the true limits of a 14-year old boy’s stomach and metabolism until it’s faced with bottomless freshly-made Mexican tacos. We all went back for thirds, minimum. It was a happy table of people from Canada, Ireland, and California whom we’d gotten to know and appreciate over the course of the class. And here we are now, slamming tortillas together as one unit of hungry, bonded chefs. I can’t say it enough – it was flawless.
Just like everything else in this area, we were not rushed to leave. We lingered and chatted and ate and drank until someone eventually said, “Well, I guess we should head out.” No schedule, no hurry. Only time, relaxation, and good company.
Are tacos and margaritas not your thing? (hmmm, are there people in this world who actually answer yes to this?) But there are other different options available – be sure to check out his other cooking classes online, including spicy tingas and peppers, seafood, moles with pork, tamales, passion fruit ceviche, jalapeno poppers, and more. I recommend following him on Instagram too. Reservations can be made very close to the date you plan to attend and he says he hosts classes six days a week.
OH – and Alfredo also owns a restaurant in La Crucecita called “Alfredo’s” which, of course, our family ate at that night. We told him we were going and when we arrived he had reserved the table up front for our family. Does it GET nicer than that? The food was unsurprisingly spectacular and it felt good to support this awesome guy and his passion.
