You could easily hang out on the beach while she surfs or check out some of the shops/restaurants all along the beach. The do book excursions but I’m not sure about a boat tour. We booked a trip to a volcano with them and it was excellent.

Our Estuary tour was wonderful. We took the early morning tour that started at 7:30. It was the perfect time of day. Our guide, Miguel, was very knowledgeable and friendly, and seemed to be able to anticipate where the animals were so we had a chance to see several birds, crabs, and a crocodile. We walked through the forest learning about some of the plants and trees while Miguel also kept an "ear out" for the Howler Monkeys. Unfortunately, we didn't hear any nor get to see any before we returned to our boat to return, but just going through the estuary and learning so much about the environment and the symbiotic relationship of plants and animals was very educational. It was an extremely informative, relaxing, and delightful tour.
